Apart from being extremely versatile and delicious, a Frittata  is simple and easy to make.It can be eaten as breakfast or as a main course with any soup or salad.

Ingredients:

Eggs  4
Flour   1tbsp
Milk   1/2 cup
Mixed vegetables  1cup
Onion chopped   1/2 cup
Green chillies chopped   1tsp
Grated cheese    1cup
Salt and pepper    according to taste
Parsley or corriander leaves chopped   1tbsp
Mixed herbs    1tsp
Oil     1tsp 
 


Methods


In a bowl whisk eggs with flour and milk.Add salt and pepper and mixed vegetables,onions, green chillies and parsley.Heat a non stickpan over a medium flame .Pour a tbsp oil spread the egg mixture and sprinkle mixed herbs and grated cheese over it.Cover with a lid and cook over a low flame until is set and nearly done.Remove from fire and put it in the hot oven for 2-3 minutes till completely set.Serve hot.
