Vegetable Cutlets with Glazed Vegetables

Can be servedit chutneys or ketchup for snacks or as starters.
A sumptuous breakfast when served with buttered toasts.

Ingredients

For the cutlets

2 big potatoes
2 small carrots
1-12 French beans or ½ cup peas
2 green chilies - chopped
½ tsp salt
½ tsp garam masala
½ tsp pepper
½ tsp jeera (cumin seeds)
4 tbsp dry bread crumbs
4 tsp maida (plain flour)
oil for shallow frying
4 tbsp crushed cornflakes

Method
Boil potatoes and mash them.
String French beans, scrape carrots.
Chop French beans and carrots finely.
Pressure cook and carrots finely.
After the first whistle pressure cook for 2-3 minutes, on low heat.
Remove from fire. When cool, mash the vegetables. (If there is water, mash the vegetables on fire so that the water dries up while the vegetables are being mashed).
Mix mashed potatoes, green chilies, bread crumbs, jeera, garam masala& pepper with the mashed vegetables.
From into heart shaped cutlets.
Make a paste of 4 tsp maida 10. Coat the cutlets with maida paste, roll in crushed cornflakes or bread crumbs.
Shallow fry in a pan till crisp and golden.
Serve with boiled and glazed vegetables as given.
