Ingredients:
Broccoli 8-10 florets
Pea aubergine 4
Baby corn 5
Cherry tomatoes 5-6
All coloured bell pepers 1/2 cup
Galangal chopped 1tsp
Green thai curry paste 2tbsp
Coconut milk 100ml
Vegetable stock 100ml
Red chilli powder 1tsp
Kaffir lime leaf 2
Basil 3
Soya sauce 1tbsp
Lemon juice 1tsp
Salt to taste
Oil 2tbsp
Method:
Heat oil in a pan add curry paste saute for 2 minutes.Add all the vegetables and galangal. Cook stirring all the time till half done.Add stock and coconut milk. Add salt, red chilli powder and soya sauce. Cook till done.Add kaffir lime, basil and lemon juice.Serve hot with steamed rice.
