Ingredients:
Self raising flour 1cup
Eggs separated 2
Castor sugar 1/2 cup
Hot water 3tbsp
Strawberry essence 1tsp
Strawberry jam 2tbsp
Method:
Lightly greased a12x10 swiss roll tin and line with a grease proof paper. Sift flour.Beat egg white till stiff but not dry,and beat in the sugar until stiff. Add egg yolks and beat until thoroughly mixed in.Fold in flour quickly and lightly.Pour water around the sides of bowl and fold in gently.Pour into the tin. Shake the tin to spread out evenly. Bake in a moderately hot oven for 12-15 minutes. Take a grease proof paper liberally sprinkled with castor sugar.Turn sponge over it. Roll up quickly in the paper and leave for about a minute then unroll.Spread warm, sieved jam over surface and roll again. This time without paper.Sprinkle with castor sugar before serving.
