Ingredients
Maida 100gms
khoya 2 tbsp
Milk 100 gms
Baking powder 1/4 tsp ( levelled )
mixed chopped nuts 1/2 cup
Clarified butter ( ghee ) for frying
For the sugar syrup
Sugar 500gms
Water 1 cup
Yellow food colour 2-3 drops
Saffron a few strands
Method
For the syrup :
Boil water and add sugar to it. Let it boil.
Make a sugar syrup of 1 thread consistency.
Add food colour and saffron.
For the pancakes :
Boil the milk till it reduces to half.
In a pan, roast the rava till light brown.
Add to the milk along with maida.
Keep stirring so that there should be no lumps.
And it should be a smooth pouring omlette like consistency. Add more than half nuts.
On a preheated tawa heat the ghee. Take the batter in a glass.
Pour in circular movements into the ghee to form a small pan cake. Let it cook.
Turn over and cook from both the sides.
Dip the malpura in the syrup and lay out on a plate.
Garnish with nuts. and serve hot with chilled rabri.
