Vegetable Sweet Corn Salad

Ingredients
Sweet corn 1 cup
Spring onions (with green stems) ¼ cup, washed and diced
Capsicum ¼ cup, diced
Tomato ¼ cup, diced
Roasted Peanuts , 1 handful
Lemon juice, 1 tsp
For
Mayonnaise 2 tbsp
Italian seasoning 1 tsp
Method
Mix the Salad ingredients, except peanuts.
Toss in the dressing.
Keep for at least an hour in the refrigerator and serve chilled.

This is good but I would prefer some egg free cream on it
