Bhindi Masala

Thanks to the education system that kids are more well versed with english terms rather than hindi ones...
I made veggie and my son asked me what have you made with such a nice aroma? I said Bhindi. He asked me whats Bhindi??
I replied, its Lady finger... Out of curiosity he showered me with questions: why is it called lady finger?, Is it because it is like fingers...but why only lady's? mine are also like yours!! and on and on....
But the main thing was that while talking and talking, he finished his parantha with bhindi masala...!!



Ingredients:

Okra ( bhindi or lady fingers) , 1/2 kg
Onions, 1 mediun sliced
Ginger Paste 1/2 tsp
Cooking oil 2 tbsp
Asafetida (hing) , a pinch
Cumin seeds, 1/2 teaspoon 
Coriander powder, 1 tsp 
Red chilly powder, 1/2 tsp 
Turmeric Powder, 1/2 tsp 
Salt  to taste 
Lemon juice 1 tsp
Garam masala 1/2 tsp
Chat masala to garnish
 
Method
Wash, dry and diced okra. 
In a wok heat the oil moderately, add cumin seeds and asafetida and let it splutter.
Add ginger paste and sauté onions until translucent. 
Add the okra and stir fry for a minute.
Cover and steam over medium heat till half done.
Uncover and add all spices except the garam masala, chat maasla and lemon juice.
Mix well and let it cook till tender stirring in between.
Add lemon juice when done and stir for a minute.
Transfer the okra into a serving bowl and sprinkle with the garam masala.
Garnish with fresh coriander and chat masala.
Serve hot with nice paranthas.
