Ingredients

1 teaspoon vegetable oil, for baking sheet
3/4  cup sugar
2 table spoon water
1/2 cup sliced blanched almonds
1 brick vanilla ice cream

Method
Oil a baking sheet, and keep aside. Combine sugar and approx. 2 tablespoons water in a heavy-bottomed saucepan. Cook over low flame until sugar is dissolved. Cover the pan, and bring it to a boil. let it be covered
till condensation washes down insides of pan.
On a Medium heat then cook, swirling pan occasionally, until sugar turns amber in color. Quickly stir in almonds, and pour mixture onto prepared baking sheet. Spread with back of a metal spoon until thin. Allow it to cool completely, and break into pieces.
keep some bigger peices aside for garnish.

2. Scoop vanilla ice cream into long dessert glasses. Sprinkle with brittle and serve.
