Ingredients :
For the salad :
Boneless chicken breasts, boiled and chopped 1 cup
Hard boiled eggs, 4
Onions ,1 medium, finely chopped
Boiled Potatoes, 2 medium, diced
Seeded and diced tomatoes, 2 medium
Lettuce leaves, chilled and finely chopped 6
For dressing
Mayonnaise 4 - 5 Tbsp
Salt to taste
White pepper powder 1 teaspoon
Method:
Peel and cut the eggs length ways into eight slices.
In large bowl combine the chopped chicken, egg slices, chopped onion and diced potatoes .
In a separate small bowl, mix the mayonnaise with salt and white pepper powder.
Add the dressing to the salad mixture and mix well while toss and turn.
Add chilled lettuce leaves and mix lightly.
Decorate with chopped tomato.
Cover with cling film and place in a refrigerator for twenty minutes.
Serve chilled.
